Gingerbread Cookies

1 scoop BN Pure Pro
1 egg white
¾ cup almond meal
¼ cup dried dates
1 ½ tbsp coconut oil, melted
1 ½ tbsp honey
1 tbsp ginger spice mix (or 1 tsp cinnamon, ginger & nutmeg)
1 tsp baking powder

  • Step 1

    Preheat oven to 150°C

  • Step 2

    Add BN Pure Pro, almond meal, dates, baking powder and gingerbread spice mix to a blender. Blend well.

  • Step 3

    When the mixture is solid, add egg white, coconut oil and honey to the blender. Blend until a delicate dough is formed.

  • Step 4

    Place the rolled dough into the freezer for 20 minutes or into the fridge for 2 hours.

  • Step 5

    Cut the cookie shapes from the dough. Put them on a baking sheet lined with baking paper. Bake for 10-15 minutes.

  • During baking, be careful not to burn them. If they have already started to turn brown, remove them out of the oven.
