Protein Rich Chocolate Treat

INGREDIENTS

  • 2 bananas very ripe
  • 1 cup peanut butter unsalted with no sugar added
  • 1 cup chocolate protein powder
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons chocolate chips

METHOD

  1. Preheat oven to 175°C. Line a 20 cm x 20 cm baking dish with parchment paper.
  2. Blend all ingredients except the chocolate in a food processor or blender. Scrape down the sides and blend until smooth.
  3. Transfer the batter to the prepared baking dish and smooth it into an even layer. The batter will be sticky—wetting a spatula with a little water can help. Sprinkle the chocolate chips on top.
  4. Bake for 30 minutes, then remove from the oven and let cool at room temperature for at least 1 hour before slicing into bars.
  5. Store the bars in the refrigerator for up to 2 weeks or in the freezer for up to 90 days.
