| 400g | corn kernels, fresh or frozen |
| 200mL | vegestable stock |
| 1 scoop | WPI protein or collagen powder |
| 10g | fresh thyme leaves |
| 2 | garlic cloves, minced |
| 60mL | olive oil |
| sea salt and black pepper, to taste |
In a medium-sized saucepan, combine corn kernels, garlic and vegetable stock. Bring the mixture to a simmer over medium heat, stirring occasionally. Cook for 20 minutes or until the corn is tender and cooked through.
Remove the saucepan from the heat and set aside cool for 5 minutes. Then, transfer the corn mixture to a blender or food processor.
Add the chopped thyme, protein powder and olive oil to the blender.
Blend on high speed until the mixture forms a smooth, creamy purée. If the mixture is too thick, add 1 tbsp of vegetable stock at a time until the desired consistency is reached.
Season the corn purée to taste with sea salt and freshly ground black pepper.
If adding extra protein, blend whey protein powder until well combined.
Divide the puréed corn into four equal servings (250ml each) and serve immediately or store in the refrigerator for later use.
